About the Author
Susan L. Parker-Heitel is a fifth generation Floridian. She grew up in Sarasota and currently lives in northwest Bradenton. Being a mother of four children, two of which are type 1 diabetics, she worked hard at trying to be sure that her entire family had the proper nutrition, while also concentrating on what would be best for the diabetics. Susan has always cared for people, either family, children on the pediatric floor of the hospitals or older people with Alzheimer’s disease. Among many of her current occupations, Susan is in private practice with an endocrinologist in Sarasota. In all aspects of her career, diabetes has touched her life. Because of this, she strives to understand what foods are needed and tries to make anyone’s life easier that has diabetes. She has always been an inventive cook, so she learned to substitute ingredients so that her family could eat “normal“ foods like other families. This knowledge filtered into those touched by her career as well as those reading the Bradenton Beach Diet today. This collection of recipes and the accompanying narrative is the result of years of experimentation and artistic creation in her kitchen near Palma Sola Bay.
