About the Book
Spelt contains 15 – 21 % protein which is much higher than wheat. It’s also higher than wheat in complex carbohydrates, iron, potassium and the B Vitamins, but lower in over all carbohydrates, which makes for much healthier cooking and baking. This ancient grain has been around for thousands of years and has not been genetically altered. Spelt is just another example of what great nutrition should taste like.
About the Author
My story is simple. I developed a problem digesting wheat. I refused to give up bread altogether. Seeking a solution, I found Spelt flour at my local health food store. Unfortunately there were no cookbooks or recipes available. That’s how it all started. It took a while and it took many experiments, but here it is. Wonderful old fashioned recipes made healthier, the way it should be!
