About the Author
Katsuko Kobashigawa Grigsby Mrs. Katsuko Kobashigawa Grigsby was born and grew up in the northern part of Okinawa. She moved to the US 40 years ago, is married, and has two children. She is a 1996 graduate of East Tennessee State University. She has also studied culinary art and paralegal fields from Walters State Community College. She is a sushi chef specializing in Okinawan home cooking. Dr. Yurimi Michael Grigsby, PhD Dr. Yurimi Michael Grigsby is half Okinawan and half Appalachian. She grew up in East Tennessee and received her PhD in ESL Education from the University of Tennessee. She is currently a college professor at Concordia University Chicago. She lives with her dog, Sunny, and too many plants.
