About the Author

"Big Mike" Campbell has spent most of his adult life in the food service industry. After operational success at many levels, Mike joined the State of Florida as an inspector. He leaves as a Supervisor of Inspectors with responsibility for 13 field inspectors in the greater Orlando area. During his time with the State, Mike became a member of the Florida Assn. for Food Protection, a registered trainer for NEHA through National Registry of Food Safety Professionals, a Florida Certified Food Manager, a Certified Dietary Manager, and a certified Fire Inspector. He also holds a Florida Real Estate license. Mike lives in the greater Orlando area, enjoys his grand-children, and provides consulting and training services to his clients. Mike hopes to republish this book into Chinese and Spanish to assist minority operators everywhere.
